The Earth is round. By travelling, chances are you’ll eventually end up back at your starting point. Or not far off at any rate. It was through Spain that I was greeted by old Europe. In early summer in 2000, in a cove in Rosas on the Costa Brava, Cala Montjoi, I had dinner with friends in a three-starred restaurant and began to talk about the great El Bulli. At the end of the meal, I was hired. I would also later work at Ferran Adrià’s celebrated restaurant. An “experience” as it began to be called in booming Spain, an experience that is mentioned little in a book by Denis Courtiade dedicated to restaurant service.

Barcelona’s effervescence drew me, and I opened a branch of Lavinia alongside Marie-Louise Banyols. Then one day, a good customer of this amazing store told me about a funny idea. This enthusiast dreamed of creating a sort of “cultural centre for wine”, not just wines from the region or country, but from the entire world. Four years later, Monvínic opened its doors.
