I was born and brought up in a village. In the village café to be precise. It was at the heart of Poitou, just a stone’s throw from Chinon, Saumur and the promises of the Loire, in countryside where long before “Kilomètre Zero”, everything was local; from the garden, from local Parthenaise cows and butter that wasn’t yet AOC from the neighbouring dairy.

My brother Christophe and I spent our free time in the family café; it was there, like a game, that we discovered the profession that would become our own, hospitality as they call it in schools. At eleven years old I already had my first white apron. Village or not, Chez N’zot, and I’m not joking, had English-style service and wines produced by the proprietors.

It was there that I came to realize that a meal is a celebration. And nothing else.
